After a lengthy national search for a new blue to live up to a couple of our favorite blues headed into cheese retirement, Stefanie and her team at Valley Milkhouse totally nailed the mark with Blue Bell! This Stilton-esque raw cow’s milk blue has everything we love about natural rind blues- a blend of roastiness and mild bitter notes akin to charred brassicas, a backbone of cultured butteriness, and a toasted sourdough cracker-y rind.
Our favorite application: Eric may or may not have a, frankly, dangerous obsession with graham crackers. Thankfully, this obsession overlapped with a wedge of Blue Bell for one of our favorite late night bites.
Tastes like: Charred romanesco , cultured butter, sourdough crackers.
