Boxcarr’s first entirely farmstead cheese,- a bloomy rind pasteurized goat’s milk studded with chives! And now in a cute little mini wheel format! Here the chives really act to bring out the beautiful grassiness in Boxcarr’s goat milk! On the younger side it’s all dense, cake-y picnic perfection but as it ages we get all damp-grassy, oozing decadence that makes Boursin wish it were real cheese!

Doeling Minis are currently ~5 oz squares

Our favorite application: Drape a few slices over some just sliced, still warm, charred steak and marvel as the Doeling ooze into every nook and cranny!

Tastes like: Freshly plucked chives, goat’s milk yogurt, lion’s mane mushrooms.
