A spruce bark wrapped pasteurized cow’s milk from Sequatchie, TN! The lovely folks at Sequatchie Cove Creamery utilize Jersey cow’s milk (high butter fat producers!) to produce their take on the famed alpine winter milk cheese, Vacherin Mont d’Or. This high moisture cow’s milk cheese is aged 1-2 months and has buttery ooziness, country ham richness, and wintery woodiness. Each wheel weighs around 1 pound making it the perfect cheese board centerpiece or all-day-grazing snack! We don’t like picking favorites, but this guy is so incredibly special. Every new person to give it a try gives us immense joy…so try it!
Our favorite application: Similar to Rush Creek Reserve, the only way to eat this beauty is to peel back half of the top rind using a paring knife before boxing out your friends and family to consume the majority of it with warm crusty bread.
Tastes like: Custard, sautéed maitake mushrooms, slow-cooked beef with grain mustard.
