The newest spruce bark wrapped kid on the block! This little beauty is a pasteurized sheep’s milk from Weston, MO! As we mention with most of the sheep’s milk cheeses on here, sheep’s milk is the most nutrient-packed and fatty of cow, goat and sheep’s milk, and boy does it count here! Spruce wrapped cheeses are traditionally made from fattier, more nutrient rich winter milk, so the velvet-y, lanolin-laced mixed milk paste here is extra luxurious. This cheese is extremely limited, so if you see it available, it means you have the rare chance to be one of a few people to get their hands on one of these!
Our favorite application: Similar to Rush Creek Reserve and Ebenezer, the only way to eat this beauty is to peel back half of the top rind using a paring knife before boxing out your friends and family to consume the majority of it with warm crusty bread.
Tastes like: Custard, roasted chanterelles, leg of lamb.
